THANKSGIVING SANDWICHES
2 slices of bread
Stuffing
Turkey, best if cut into slices
Cranberry relish
Lettuce, Romaine or Iceberg
Mustard
Spread one slice of bread with mustard, and the other with cranberry relish. Lay a couple of lettuce leaves over the mustard slice, and top with the remaining ingredients. Combine the slices of bread and serve.
TURKEY ENCHILADAS
1 can (15oz) refried beans
Flour tortillas
1lb turkey, shredded
Cream cheese (8 oz)
½ cup salsa
1 cup enchilada sauce
1 jalapeno (chopped)
1 cup monterey jack cheese
Place the refried beans in a pan and heat until the beans are warm. Warm the tortillas as well, either in a pan or by wrapping them in aluminum foil and placing them close to the fire. Place the turkey into the tortillas and spread with beans, cream cheese and salsa and chopped jalapeno. Roll up the tortillas and place them in a covered skillet. Pour enchilada sauce on top, sprinkle with cheese, and cook until the enchiladas are hot and the cheese is melted. Serve and supplement with additional enchilada sauce if desired.
SPICY TURKEY SOUP
1 onion, sliced
1 bell pepper, chopped
2 cups chicken stock
1 clove garlic, minced
2-3 cups turkey, chopped
1 cup salsa
3 cups tomato juice
1 tbsp smoked paprika
¼ tsp cayenne
Salt and pepper
1 tbsp olive oil
Place a pot over a camp stove set to high heat and add olive oil. When oil is hot, add onion and bell pepper, stirring until tender. Add chicken stock and reduce heat to low. Add in the remaining ingredients, stir, and raise the heat to medium. Simmer for 15-20 minutes, or until heated through.
THANKSGIVING SALAD
3-5 cups leftover turkey, chopped
1 cup stuffing
½ cup dried cranberries
½ cup sliced almonds
2 stalks celery, chopped
2 tbsp mayonnaise
1 tsp lime juice
¼ tsp cayenne pepper
Salt and pepper
This easy recipe is great for dayhikes and overnighters, but mayonnaise spoils quickly when not refrigerated, so is probably best not included in menus for longer camping trips.
Combine turkey, stuffing, cranberries, almonds, celery and mayonnaise in a bowl, and mix. Add lime juice, cayenne pepper, salt and black pepper to taste.
